Ube (ooh-beh) is a purple yam commonly used in Asian cooking, particularly in the Philippines. We’ve made an ube marshmallow (gelatin free) ice cream and swirled it with passionfruit sherbet! The result is half delicate marshmallow, half punchy passionfruit.
